As a lot of you already know, storing hatching eggs in the fridge (before incubation) is not a good idea as the low temperatures can affect their viability. However in the summer, room temperatures can exceed 30 degrees and we often get asked where is best to store fertile eggs prior to hatching.

The best temperature to store fertile eggs prior to hatching is 11-15 degrees Celsius. This can be easily achieved using a wine fridge, which usually runs around 12-14 degrees Celsius. That is what we use to store our eggs to preserve their viability for hatching purposes. They can be stored there for up to a week before you incubate them and day 1 of incubation starts the day after they are placed inside an incubator or under a broody hen. Although fertile eggs can be stored at ideal temperatures for up to 2-3 weeks prior to incubating and still hatch successfully, we do not recommend storing them for more than a week if you care to preserve high rates of viability.
